Homemade(ish) Meatball Soup

My favorite dinner is called, “Super Easy Meal That Isn’t Spaghetti.” Today’s installment is Homeade(ish) Meatball Soup.

4 C broth

1 C pasta sauce

1 C pasta/rice (uncooked)

1 can black or red beans

1 bag frozen mixed vegetables

Fully cooked meatballs (or italian sausage or ground beef or “meat” substitute)

Combine broth and pasta sauce. Bring to a boil. Add everything else and cook until the pasta is soft. Serve with garlic bread.

Fifteen minutes on a slow-moving day. DONE.
